A young beef is typically 15-22 months. It is smaller, more tender, with less marbling in the steaks and roasts and less fat in the ground beef.
This is for a full quarter. Final price with cut and wrap will be $4.80 per pound hanging weight, due before pickup at butcher.
Total hanging weight = 546 (136.5#/quarter)
By the quarter this will be a standard cut. For each half (2 quarters) this will be full custom cut.
